Easter Recipes




My German grandmother gave me her Easter Cake Molds, so I love to make Easter cakes.





Easter Egg Wreath Bread - Above

After many years of marriage we seem to have our ‘go to meals’ for the holidays. Our family loves a traditional Ham Dinner with Pineapple Stuffing and Baked Rigatoni & Cheese. An Italian tradition is Pepperoni Bread. I usually use the frozen bread (of course thawed) so that makes for one shortcut. I make everything up a day in advance so on Easter I can spend time with my family!


Last year I made Sweet Kat's Easter Egg Wreath & Rachael Ray's Italian Cheesecake Ricotta Pie. Check out these recipes below. Everyone loved them! My German grandmother gave me her Easter Cake Molds, so I love to make an Easter cake too.




Ham & Pineapple Stuffing (recipes below)

Easter Dinner

Ham

Pepperoni Bread

Pineapple Stuffing

Rigatoni mac & cheese

Easter Egg Wreath Bread

Ricotta Pie

Pepperoni Bread -Let frozen dough thaw and rise.

Knead and roll thin with dusted flour.

Melt 4 T. butter. Spread on top of bread.

Layer sliced pepperoni and Am cheese on top.

Roll like jelly roll.

Brush mixture on top- 1 egg, 2 t. parsley, water, pepper and parmesan cheese.

Place on greased cookie sheet.

Bake 350 degrees for 30 – 40 min.

Pineapple Stuffing

Cream 1 c. sugar and ½ c. butter

Add 3 eggs.

In a separate bowl 4 c. bread cubes and pour ½ c. milk & toss.

Combine the bread mixture in the butter mixture.

Mix all together then pineapple last.

1-20 oz. can crushed pineapple and juice.

Pour in 13 x 9 pan.

Bake 350 50 - 60 min.

Rigatoni Macaroni and Cheese

1 box Rigatoni-cooked

8 oz. sharp cheddar cheese, grated

1 pt. sour cream

1 pt. mayonnaise

Mix all together then add 1 Quart of Milk.

Pour into 13 x 9 pan. (A larger pan makes for easier mixing)

Sprinkle with salt, pepper and paprika.

Bake uncovered 350 45 min – 1 hour

Rachael Ray's Italian Ricotta Pie

Ingredients:

  • 3 pounds ricotta cheese
  • 9 large eggs
  • 1½ cups granulated sugar
  • Grated peel and juice from 1 orange
  • 1/4 cup heavy cream
  • 2 tablespoons pure vanilla extract
  • Confectioners’ sugar, for sprinkling
  • Directions:
  1. Preheat the oven to 350°. Butter and flour a 10-inch springform pan and place it on a baking sheet.

  2. Using an electric mixer, combine the ricotta, eggs, granulated sugar, orange peel and juice, cream and vanilla. Pour into the prepared pan and bake for 1½ hours. Turn off the oven and let the cake rest inside for 30 minutes. Let cool, then sprinkle with confectioners’ sugar.

I have been making these blown eggs for a long time. Put a pin hole at each end of a raw egg & blow out egg. Let dry. Glue lace around the egg & glue pearls in the shape of a cross. So simple!

A Royal Wedding




Prince William will marry Kate Middleton on Friday, April 29th at Westminster Abbey in London. I wish them much happiness. To celebrate I purchased commemorative mugs for my granddaughters. I pray it will be a beautiful day.

When we were in England we visited Westminster Abbey. It is such a beautiful place for a wedding. Will you be watching?

Hyde Park and Trafalgar Square will be the venues for free live screenings of the ceremony. Did you know Clarence House is the official residence of The Prince of Wales, The Duchess of Cornwall, Prince William and Prince Harry? Clarence House is next to The Green Park and close to Buckingham Palace.
We didn't have time to go to Buckingham Palace. I must go back!

The wedding will take place at 11 am London time. (6 am EST)The wedding reception will be held at Buckingham Palace. See their interview below and a lovely picture of William's parents wedding photo.

"Soul Surfer" about Bethany Hamilton's Shark Attack


Have you heard about the film "Soul Surfer"? It is about surfer Bethany Hamilton's shark attack and her challenges to continue to be a professional surfer. It is a spiritual journey that would be great for your kids to hear about!

She held a Meet and Greet in Ocean City. It was so exciting to see all the kids lined up to meet her.


Her story is very inspiring!

Bethany's father Tom Hamilton grew up in Ocean City, NJ.

Bethany said, "It was what God had taught me growing up that helped me overcome my fear and get back on the board. 'Be strong and courageous. Do not be terrified; do not be discouraged, for the LORD your God will be with you wherever you go' (Joshua 1:9)."

Summer fun in Ocean City. I can not wait til summer!


Surfing contest @ 7th St Beach. My husband has been a surfer since he was 12! He used to sit in front of me in 9th grade homeroom. He used to come to school everyday with his long hair soaking wet after already being out surfing. I think it was love at first sight!

Cheers and Slainte to all the Scots out there and all who wish they were Scots!

A toast to all the Jamieson and Livingstone families and my distant cousins.

My ancestors Thomas and David Jamieson knew everything about making tartans from the sheep to the dyes. I dream of visiting Scotland someday...have you been there? My relatives are from Oban area,(Kilbride) and also lived in Glasgow and Edinburgh...and came to America in 1876.

The Water Club at the Borgata, Atlantic City NJ

Happy Birthday to you!


We recently had a fabulous getaway to The Water Club at the Borgata in Atlantic City to celebrate my sister and her husband’s 50th Birthdays! They live in Georgia so we were so happy to get to spend some time with them!

Absecon Lighthouse

We had a divine dinner at the new Italian Restaurant Fornelletto in the wine cellar at the Borgata where Umbra used to be. The food was incredible. We started with meatballs in sauce, fresh ricotta crostini and chopped salad. Entrees included veal parmigiana (above) , veal 'osso bucco' ravioli and Eggplant, tomato and mozzarella and pasta (below). Everyone raved over their meals and the great service. Then we headed off to enjoy some Gelato!


Other great restaurants include Bobby Flay Steak, Wolfgang Puck America Grille, Sea Blue, Izakaya Japanese Pub, and Old Homestead Steak House. They also have an incredible Buffet and more family friendly dining @ The Cafeteria in the lower level including ice cream, pizza and burgers.
We have had spectacular meals @ Bobby Flay, the Old Homestead and the Buffet.

The Spa is $45 extra but we didn't have enough time to explore there or get massages.
