EZ Summer Recipes Pound Cake Trifle, Tomato Salad, Pasta Salad


I wanted to share some of the recipes I made for the 4th of July.

Red White and Blue Pound Cake Trifle with Strawberries and Blueberries

Super EZ - Layer Entenmann's Pound Cake with Cool Whip and sliced strawberries and blueberries in a trifle. That is my picture above! We spent the 4th with my parents, went swimming in the lagoon, cooked hambugers and enjoyed these 3 dishes. We went home before the fire works...why is 9 pm so late anymore?
My weekend will be spent gardening, maybe the beach and then friends coming down on Sunday! Hope you have a good weekend! We are having thunder storms again and the pool is almost full of water! Next post I will tell you about being attacked by Yellow Jackets this week...

Tomato Salad - great with Jersey Tomatoes

6 Large Tomatoes. Cut in wedges.

½ c. parsley

2 cloves garlic, minced

1/3 c. olive oil

2 T. Cider vinegar

½ t. salt

1 T. fresh basil, chopped

Hot sauce optional.

Combine dressing. Pour over tomatoes. Chill.

Italian Pasta Salad with Salami and Provolone

1 lb. Cooked spiral pasta

1 bottle Wishbone Italian dressing

1 green pepper, cherry tomatoes, cucumber chopped

1 small onion, chopped

½ lb. salami, cut into strips

½ lb. provolone, cut into strips

Combine all ingredients and chill.
